As a child, I used to watch my parents and relatives make tomato sauce in the jars.  It was an event every summer that I will never forget!  There was a silent competition on who could do more bushels of tomatoes that day.  One of my relatives I remember did 16 bushels in 1 day.  Now that is a lot of work!

Da bambina, ho guardato i miei genitori e parenti fare la salsa di pomodoro nei vasetti. E 'stato un evento ogni estate che non dimenticherò mai! Every Italian makes the sauce a little different, this is my mom’s way and it is THE BEST!
Ogni Italiano fa la salsa un po 'diverso, questo è il modo di mia madre ed è IL MEGLIORE!













Everything starts with the tomatoes!   My mom buys a bushel at a time.  In the old days, we used to pick them at the farm with Compare Peppe (RIP), my father’s best friend, and his family.  San Marzano tomatoes work the best.

Here is the step by step process on jarred tomatoes, ENJOY!

Cut washed tomatoes in half and don’t forget to take the green parts out and any brown marks.  Put them in a big pot to boil for about half an hour.  Tomatoes should now be soft and mushy. Hint* if it’s too watery, you have to stain it.  See how my mother strains the water.

Tagliare i pomodori lavati a metà e non dimenticare di tagliare le parti verdi e le macchie brune.  Mettetele in una pentola grande far bollire per circa mezz'ora. Le pomodori dovrebbe essere morbido e pastoso. Suggerimento, se c’e` troppo acqua, è necessario che si leve un puo. Vede come fa mia madre.













Step 2
Secondo Passo








Time to puree the tomatoes, through the machine.   One part gives the sauce and the other part takes out the peel and seeds.  My mother puts the peel and seeds in twice through the machine, because there’s still more juice there.  Now, the secret to my mom’s super tasting sauce is that she blends the basil with the sauce puree and mixes it in the pail.  That’s it!  Now put this puree in clean jars.  



Tempo di fare la salsa di pomodori, attraverso la macchina. Una parte la salsa e l'altra parte tira fuori la buccia e dei semi. Mia madre mette la buccia e dei semi due volte attraverso la macchina, perché c'è il succo ancora di più lì. Ora, il segreto per la super-gustosa salsa di mia madre è che il basilico si mescola con la purea di salsa e giralo nel secchio. Questo è tutto! Ora mettete la purea nei vasetti puliti.





Top Secret...Secreto

My mom sterilizes the jars the day before, and she does that by boiling the jars in hot water for about 10 minutes.  You may want to put a towel underneath the jars, so they won’t crack.  Also, use medium heat.

Mia madre li sterilizza il giorno prima le vasetti, e lei lo fa facendo bollire i vasetti in acqua bollente per circa 10 minuti. Si consiglia di mettere un asciugamano sotto i vasetti, in modo che non si rompano. Inoltre, usare il calore medio.


















When putting the puree in the jars, add a couple of fresh basil leaves.  We use our own organic basil from the back yard.  Also, if there is any puree along the rim, it must be wiped off, so that the lids stick well.  Put all the lids on and get ready to boil them. Make sure the jars are clean.  My mom just does it that way!


Quando mettete la purea ai vasetti, aggiungere un paio di foglie di basilico fresco. Usiamo il nostro basilico proprio organico dal giardino. Inoltre, se c'è purea lungo il bordo, deve essere pulito, in modo che i coperchi aderiscono bene.  Mettere tutti i coperchi e preparatevi a bollire. Assicurarsi che i vasi siano puliti. Mia mamma fa proprio in questo modo!







Step 3
Terzo Passo









Carefully, place all jars in the clean pot.  Make sure you add a towel underneath to prevent cracking and put your heat at medium.  High heat may make the jars crack.  Boil for about half an hour.  Keep the jars in the water until you can take them out…may take 1 – 2 hours.  Let jars dry and store in a cool dry place.  Cold cellars are the best place.
 
Con cura, posizionare tutti i vasi nella pentola pulita. Assicurati di aggiungere un asciugamano sotto per evitare rompere, e mettete il vostro calore alle medie. Calore estremo, può rompere i  vasetti. Far bollire per circa mezz'ora. Conservare i vasetti in acqua fino a che non li tolga ... può prendere 1 - 2 ore.  Lasciate asciugare i vasetti e conservare in un luogo fresco e asciutto. La cantina e’ il posto migliore.

My mother is the best Italian cook ever!!! 
I know you’re mamma may be a good cook, but mine is better!!!
Today, I came home from pre school class, and I smelled something so good.  I am very fortunate to live beside my mother.  So instead of going into my house, I just followed my nose!!!  It was the best smell ever!!!  My mom made a beautiful Calabrese style pizza.  She makes her own dough and sauce.    Then to the left of me, I see this incredible pizza that I never seen before!!!  My eyes just glowed, and I looked at my mom and said without even tasting it…"Ma, this is the best pizza ever!!!   How did you get this idea?”  Well, she said with a smile, “I watch David Rocco and he inspired me to make this!”  “Well, thank you David Rocco for inspiring my mom to make this beautiful raspberry pizza.”   Yeah for me and my tummy!!!

This is how she made it…
She made a dough ball.  You can make one yourself or buy one at the store.
My mothers words were like this…”va catatille a u negozio pe nu dolla.”
Meaning “go buy it in the store for a dollar.”
The ingredients are raspberries from her garden and sugar on top.

Mia madre è la migliora cuoca italiana!

So che la tua mamma può essere una brava cuoca, ma la mia è meglio!

Oggi, sono tornato a casa dalla classe di scuola per bimbi, e ho odorato qualcosa di così buono. Sono molto fortunato a vivere accanto a mia madre. Così, invece di andare a casa mia, ho solo seguito il mio naso! È stato il miglior odore! Mia madre ha cucinato una bella pizza stile Calabrese. Ella fa proprie la pasta e la salsa.

Poi a sinistra di me, vedo questa incredibile pizza che non avevo mai visto prima! I miei occhi brillavano, e ho guardato a mia madre e ho detto senza neppure assaggiare ... "Ma, questa è la migliore pizza che hai fatto!  Come hai avuto questa idea? "Be ', ha detto con un sorriso," Guardo David Rocco e lui mi ha inspirato a fare questo! "" Bene, grazie David Rocco per ispirare la mia mamma a fare questa bella pizza di  lampone."  Yeah, per me e la mia pancina!

Ecco come l'ha fatta ...

Ha fatto la pasta. Si può fare da soli o comprarne uno al negozio.
Mia mamma l’ha detto cosi…”va catatille a u negozio pe nu dolla”

Gli ingredienti sono lamponi dal suo giardino e lo zucchero sopra.

Patrizia’s Veal Chops

Here’s what I made yesterday.  It was just sooooo good, you just have to try it.  It’s easy to make but it takes time, so if you’re doing this for dinner, make sure you take in account it will take 2 hours to do.  But it smells soooo nice, it is worth it!!!   Prep time about 15 minutes, cooking time 1 ½ hours, clean up, 15 minutes.  So here it is…This should feed 2 people.
Extra Virgin Olive Oil and Garlic
Copper and Stainless Steel Pan
Place washed veal chops in pan.











Keep the skin on the potatoes
for extra vitamins!
Add Salt, Pepper and Oregeno and Saute
My mother's jarred tomatoes. 
You can never buy this!!!
















Ingredients:

2 Veal Chops
1 cup of sliced tomatoes
I happen to use Castelli Romani
2 potatoes
½  glass of red wine
6 Table Spoons of Olive Oil
1 Clove of Garlic
1 Tablespoon of Oregano
Salt and Pepper to taste

Pre heat the oven to 350 degrees.  Now, in a large stainless steal sauce pan with a stainless steel handle, on the stove top, fry up the garlic for a couple of minutes, then add the veal chops and top with salt pepper and oregano on both sides.  Saute for about 7 minutes on medium heat.   It has to be browned on the outside.  Add all of the other ingredients and cook for about 5 minutes.     At this time, the oven is ready, put the pan in the oven and show some love.   Just turn it once in a while,  and in about 1 ½ hours, it’s done.   
After Browning, add all ingrediants.
I added a great risotto for this dish.  When I make risotto, it’s always a 2 pot process.  One for the rice and one for the boiling water.  When you make risotto,  you always have to stir and be near the stove.  This is a great time to listen to some music and sing real loud!!!  So, here’s how I made it…you can add to this dish, but I just kept it simple because I had a lot of sauce in the veal.  Plus I was holding a baby so I wanted to make it easy and fast.   She gets heavy after a while!!!

Ingredients:
3 cups of boiling water
½ cup of aborio Italian rice
1 beef dado cube
3 tablespoons of oil
A few slices of onion

Directions:  Saute the oil with the dado cube and onion.  As soon as 1 song goes by – about 3 minutes, add your rice.   Saute for another song – then add about 2 ounces of water at a time.  Once the rice starts looking thirsty, just add another 2 ounces.  You have to keep on stirring and adding small amounts of water until it’s cooked.  Then let it rest for 5 minutes with a lid on the pot.  This is about a 20 – 30 minute process.  You can read the directions on the back of the package for optimal results.  Try it out!!!


Costolette di vitello di Patrizia



Ecco cosa ho fatto ieri. Era taaaanta buona, la devi fare!  E 'facile da fare ma ci vuole tempo, quindi se fai questo per cena, assicuratevi di prendere in considerazione ci vorranno 2 ore per fare. Ma l'odore e tanto bello, ne vale la pena! Tempo di preparazione circa 15 minuti, il tempo di cottura 1 ora e mezzo e pulire 15 minuti. Così qui è ...
Questo dovrebbe cibare 2 persone.

 


Ingredienti:
2 Costolette di vitello
1 tazza di pomodori a fette
2 patate
½ bicchiere di vino rosso
6 cucchiai di olio d'oliva
1 spicchio d’aglio
1 cucchiaio di origano
Sale e pepe a piacere

Preriscaldare il forno a 350 gradi. Ora, in una grande casseruola di
acciaio con il manico in acciaio, sul fornello, soffriggere l'aglio per un paio di minuti, poi aggiungere le braciole di vitello, meti il sale,  pepe e origano su tutte due  lati.  Soffriggere per circa 7 minuti a fuoco medio. Deve essere rosolato. Aggiungere tutti gli altri ingredienti e cuocere per circa 5 minuti. In questi momenti, il forno sara pronto, mettere la casseruola in forno e  devi mostrare un po 'd'amore.  Basta girare di tanto in tanto, e in circa 1 ora e mezza, è fatta.

Ho aggiunto un ottimo risotto per questo piatto. Quando faccio il risotto, è sempre un processo di due
pentole. Uno per il riso e uno per l'acqua bollente. Quando faccio il risotto, devi sempre girare ed essere vicino alla stufa. Questo è il momento ideale per ascoltare musica e cantare veramente forte! Quindi, ecco come ho fatto ... è possibile aggiungere a questo piatto, ma ho continuato semplice perché ho avuto un sacco di salsa. Inoltre avevo in mano una bambina così ho voluto fare questo facile e veloce. Lei si fa pesante dopo un po '!

Ingredienti:
 
3 tazze d’ acqua bollente
½ tazza di riso italiano aborio
1 cubetto di dado
3 cucchiai d’olio
Qualche fettina di cipolla

Direzioni: Soffriggere l'olio con il cubo dado e cipolla. Appena 1 canzone e finito - circa 3 minuti, aggiungete il riso. Soffriggere per un altra cansona - quindi aggiungere circa 2 grammi di acqua a la vuolta.  Quando il riso inizia a cercare sete, basta aggiungere altri 2 grammi o mezzo bicchiere d’aqua.  Devi continuare a mescolare e aggiungendo piccole quantità d'acqua fino a quando è cotto. Poi lasciate riposare per 5 minuti con un coperchio sulla pentola. Si tratta di circa 20 - 30 minuti di processo. Potete leggere le istruzioni di dietro della confezione per ottenere risultati ottimali. Provatelo!

Nonna Inspired Cooking  
The Real Calabrese Way!!!   CAPISH!!!

I came home tonight, and thought, what shall I make for dinner???  So I opened my fridge and saw some ground beef.   HHHMMMMM…   Then as I looked to the left, I saw a beautiful plate of white rice.  Underneath the rice were some fresh eggs.   HHHMMMMM   There is going to to be a feast in here tonight I thought!!!   So, here’s what I made…Try it out!












 
 







 

 

Meat and Rice Balls Patrizia's Way




YOU WILL NEED

 2 eggs
1 cup of cooked white rice
500 grams of gound beef
Garlic
Salt and Pepper to Taste
Sliced Olives
Parmesan Cheese
Mozzarella Cheese
Bread Crumbs

In a medium size bowl, mix with your clean hands the rice with 1 egg, 1 clove of garlic, some sliced olives, shredded mozzarella, parmesan cheese and some salt and pepper to taste.   In another bowl, mix the ground beef, 1 egg, parmesan cheese, 2 tablespoons of breadcrumbs and some salt and pepper to taste.  
At this point, you can make a variety of things.  What I did was I mixed it up.  So I had a bit of this and a bit of that.  For my rice balls, all I did was add a coating of bread crumbs all around it.  For my meat and rice balls, I added the meat around the small rice ball. 
Preheat the oven to 350 degrees and bake in a lightly greased pan for 45 minutes and turn 2 times. 
I also added 2 of the meat balls to the sauce I made tonight for my linguini.  Everything was delish healthy and not fried!!!

Sono tornato a casa stasera, e ho pensato, cosa devo cuccinare?? Così ho aperto il frigo e ho visto un po di carne macinata. HHHMMMMM ... Poi, come ho guardato a sinistra, ho vistoun bel piatto di riso bianco. Sotto il riso ho visto alcune uova fresche.HHHMMMMM Ci sara una festa in questa casa stasera ho pensato! Quindi, ecco cosa ho fatto ... Provalo!



Carne e Riso Polpette e Crocchè a via e Patrizia








AVRETE BISOGNO DI
2 uova
1 tazza di riso bianco cotto
500 grammi di carne macinata
Aglio
Sale e pepe
Olive affettate
Parmigiano
Mozzarella
Pangrattato









Carne e Riso Polpette a via e Patrizia

In una tazza, mescolare con le mani pulite il riso con 1 uova, 1 spicchio d'aglio, le olive affettate, mozzarella,parmigiano e un pizzico di sale e pepe a piacere. In un'altra tazza, mescolare la carne macinata, 1 uovo, parmigiano, 2 cucchiai di pangrattato e un po 'di sale e pepe a piacere.
A questo punto, è possibile effettuare una varietà di cose. Quello che ho fatto è un puo di tutto. Così ho avuto un po 'di questo e un po' di quello. Per le mie crocchè, tutto quello che ho fatto è stato aggiungere uno strato di pangrattato tutto intorno. Per le mie polpette di carne e riso, ho aggiunto la carne intorno alla piccola polpetta di riso.
Preriscaldare il forno a 350 gradi e cuocere in una padella leggermente ingrassato per 45 minuti e girare 2 volteHo anche aggiunto due delle polpette al sugo che ho fatto stasera per le mie linguini. Tutto era deliziosa,sana e non ho fritto niente!!!
